As The Rhode Show continues to celebrate Beach Week, the crew got to enjoy a special smoothie that is both delicious and nutritious for the summer season.
Katie McDonald of bnourished.com stopped by to share a perfect, beach-friendly beverage that will satisfy a sweet tooth without extra sugar or cream.
- 1 cup fresh or frozen pineapple
- 1 1/2 coconut water
- 1/2 cup unsweetened shredded coconut flakes
- 2 dates, pitted
- 2 tsp vanilla extract
- pinch salt (pink Himalayan if available)
Add 1 cup of leafy greens like spinach, romaine, bok chou, kale to boost nutritional profile substantially. Add more pineapple or dates to compensate for bitterness of greens if desired. Spinach impacts the smoothie flavor the least amount.
Blend and serve.
