In the Kitchen: Pan seared scallops with apple butter

Chef Josh Berman joined The Rhode Show from Revolving Door in Newport, talking about the cool happenings at the restaurant, like the Chef Battle coming up. He also is making a fun specialty drink and pan-seared scallops with apple butter melange of fall squashes.

Ingredients:
U 10-20 scallops
Delecta, kabocha, and acorn squashes
Belgiun endive
Champaign vinegar
Apples
Cinnamon
Butter
Apple cider
Coriander
Garlic
Thyme
Kosher salt cracked black pepper

Drink recipe:
1oz vodka
1oz gin
.75 oz citrus mix
.75 oz 5 spice syrup
3-5 thai basil leaves
