Angry Orchard BBQ Ribs and Apple Slaw

Chef Danny Morgan from Pamfilio’s Italian Deli & Catering is showing us how to make Angry Orchard BBQ Ribs and Apple Slaw.

Apple Slaw
1 shredded cabbage
2oz shaved carrots
20z shaved red onion
1oz cilantro
1 whole apple cored and diced
pinch cinnamon
1 tsp honey
1/2 cup apple cider wine
1/2oz lemon zest
1/2 cup mayo
pinch caraway seed
salt and pepper to taste

Directions: In a mixing bowl add mayo, lemon zest, apple cider, cinnamon, honey.
Next add cabbage, carrots, red onion, cilantro, apple, caraway seed and mix together. Add salt and pepper to taste.

Ribs
1 rack of baby back ribs
1/2 cup spice rub
1 cup bbq sauce
1/2 cup apple cider vinegar
1/2 angry orchard cider

Directions:
Rub the ribs with dry rub.
Place in pan and add both ciders.
Add salt and pepper to taste.
Cover and cook for three to four hours.

When ribs are fall off the bone tender, remove from the pan.
Add juice to stock pot and add BBQ sauce and rub all over the ribs. Cook for another 10-15 min. Enjoy!
