In the Kitchen: Lobster and Potato Gnocchi

Discover Newport has brought Chef Rich Silvia from The White Horse Tavern, making Lobster and Potato Gnocchi.

1 ea 1 ½ lb lobster
½ bulb fennel
2 oz applewood bacon
2 oz caramelized shallots
8 oz butternut stock
2 oz butternut puree
2 oz unsalted butter
1 bunch broccolini
3 oz parmesan
8 oz potato gnocchi


For the Lobster:
Blanch the Lobster in Salted, Boiling water for 8 minutes and shock in ice water to stop the cooking. Pick the lobster, cleaning the tail and both claws for the dish. Reserve the knuckles, head, and shells for bisque or soup.

For The Butternut Stock:
Simmer the following together until you have a stock strongly perfumed with butternut squash: 2 lbs peeled butternut, 1 carrot, ½ Spanish onion, 4 oz orange juice, 4 oz apple cider, 1 gal water, salt and pepper to taste.

For the Bacon:
Slice the bacon in thin strips and render in a sauté ban until crispy. Reserve and set aside on paper towels to drain. Reserve the bacon fat for the Fennel.

For The Fennel:
Wedge the fennel in 4-6 pieces leaving the stem intact for presentation. Add the bacon fat to a medium sized sauté pan and sear the fennel on one side. Flip the fennel over and add a sprig of thyme and finish roasting the fennel in a 350 degree oven until roasted through.

For the Parmesan Crisp:
Heat a Sheetpan in the oven and spray it with non stick spray. Arrange the parmesan in little piles and return to a 350 degree oven and bake until the parmesan forms crisps. Remove from the sheet pan and cool on a rack until solid and crunchy.

For the Dish:
Melt the butter in a sauté pan. Add the bacon and gnocchi and brown lightly until crisp. Add the butternut broth and butternut puree and simmer lightly. Add the fennel, broccolini, and lobster and simmer until the broccolini is cooked through. Remove the lobster to not overcook and add a few lumps of butter and the caramelized shallots. Reduce until the sauce thickens and becomes rich.

Plate as directed.
