In the Kitchen: Baked Almond Crusted Salmon Fillet

Discover Newport has brought Executive Chef J. Daniel Knerr, from The Black Pearl, to show us how to make their Baked Almond Crusted Salmon Fillet.

4 -6 oz salmon fillets
8 oz sweet butter
2 oz panko crumbs
2 oz  almond flour
1 oz sliced almonds
1 oz marcona almonds fried and salted
3 oz lemon juice
2 tablespoons of water
salt and white pepper to taste
2 teaspoons chopped chives


Preheat oven to 450-475

In a food processor, combine all the dry ingredients with 1/4 tsp of salt and grind until fine.

Dip seasoned salmon fillets in 3oz of melted better, then coat in almond flour and panko crumbs.

Bake in hot oven for  8 to 10 minutes, depending on the thickness.

Combine lemon juice and water in a small saucepan and bring to a boil.

Whisk small pats of butter in the mixture until it is completely emulsified.

Remove from heat and transfer to another vessel to avoid breaking.

Place sauce on the plate, then and the salmon on top of the sauce. Garnish with chives
