In the Kitchen: Guacamole

Josh Trautwein and Chef Travis “T-Bone” Talbot were here making some food from the Fresh Truck.

3 tomatoes, seeded and diced small
½ red onion, chopped
1 lime, juiced
1 jalepeno, seeded and diced
½ cup cilantro, chopped
3 avocados

  1. Combine diced tomatoes and chopped red onion in a
    large mixing bowl.
  2. Add lime juice, and stir to coat.
  3. Add diced jalapeno.
  4. Set and chill for at least 15 minutes.
  5. Fold in cilantro just before serving.

½ red onion, chopped
1 lime, juiced
¼ cup cilantro, chopped
salt to taste

  1. Cut avocados in half, then remove the seed and scoop out the flesh.
  2. Mash avocados in a large bowl.
  3. Then fold in the diced tomatoes, chopped red onion and cilantro.
  4. Add lime juice, and stir to distribute evenly.
  5. Sprinkle with salt and let sit for half an hour to an hour before serving.
