Patrick DeSocio, owner of Preppy Pig BBQ, joined The Rhode Show Tuesday to make a Hot Smoked Salmon BLT.
Will dry rub salmon. Grill salmon filets 350-400 degrees. Keep burner hot on one side. Grill away from heat. 12-15 min depending on temp of grill.
While that’s happening. Cook off bacon. Bake bacon in oven at 350 for 20 minutes.
While fish is going, bacon is cooking. Prepare ciabatta rolls.
Use Preppy Pig White BBQ Sauce. Spread BBQ sauce on roll.
Layer Roma tomato, arugula. Pull salmon off of the grill. Let rest for 3-5 minutes. Place bacon on top of salmon.
Apply second spread of White BBQ sauce on top of roll. Close bun and enjoy!
