In the Kitchen: Sesame Seared Ahi Tuna

We’re making Sesame Seared Ahi Tuna, with Executive Chef Ariel Fontanilla, of Ballard’s Inn.

Tuna – 8oz
Sesame Seed Black – 1 tsp
Sesame Seed White – 1 tsp
Salt – 1/4 tsp
Black Pepper – 1/4 tsp
**Wasabi Mayo**
Mayo – 1/2 Cup
Wasabi – 1 Tbs
**Asian Dressing**
Chopped Onion – 3/4 Cup
Soy Sauce – 3 Tbs
Rice Vinegar – 2 tbs + 1 Tsp
Water – 2 tsp
Sugar – 1/2 tsp
Sesame Oil – 4 tsp
Grape Seed Oil – 4 tsp
Powdered Mustard – 1/2 tsp
Salt – Pinch
Pepper – Pinch

1. In a mixing bowl put the mayo and wasabi, mix together and set aside
2. In another bowl mix the onion, soy sauce, rice vinegar, water, sugar, sesame oil, grape seed oil, powdered mustard, salt and pepper. Mix together until incorporated.
3. Preheat the pan
4. Season the tuna with black pepper, salt and sesame seed (black and white)
5. Sear the fish on both sides (at least 2 minutes per side)
6. Slice the fish a little bit thick and arrange it on the plate. Drizzle with Aisian Dressing and Wasabi Mayo
7. Garnish with Micro Greens
If you desire the fish to be cooked more put it in the oven, depending on the temperature you would like the fish.
