In the Kitchen: Macadamia-Crusted Halibut

Chef Kevin Des Chenes was here ahead of the Greenwich Wine and Food Festival, making Macadamia-Crusted Halibut with coconut curry broth.
Ingredients:
halibut
coconut milk
yellow curry powder
orange juice
macadamia nuts
salt
pepper
olive oil
Steps:
  1. Coat Halibut with chopped macadamia nuts, sear both sides for 2 minutes each.
  2. Bake in oven for 5-7 min
  3. Combine curry, orange juice, coconut milk in sauce pan and reduce.
  4. Spoon curry broth over fish and serve!
