Black Forest Cake

Discover Newport has brought in Chef Xavier Mauprivez from The French Connection making Black Forest Cake.


For the cake:

1 C. oil
1 stick butter
1 3/4 C. sugar
2 C. flour
1 C. cocoa powder
1 tsp baking soda
pinch of salt
2 Eggs
1/2 C. sour cream
1 tsp vanilla
1 C. warm water
2 C. cherries for filling

For the icing;

2 C. Heavy cream
1/2 C. confectioner’s sugar
1 Tsp. vanilla


Combine all the dry ingredients in a bowl, mix at low speed until blended.
Then add all the liquid ingredients and mix until smooth.
Pour in a 8′ cake pan lined with parchment paper.
Bake at 300 Degrees for at least one hour. Use a toothpick to test if it’s done.
Cool the cake for a couple hours. (preferably overnight)
Slice the cake in half.
Spread the cherries.
Whip the heavy cream with the sugar and vanilla until stiff peaks form, then assemble cake. Decorate with a few cherries and chocolate shavings.
