In the kitchen: Mozzarella en Carozza

TV Maitre d’ Joe Zito has brought in Chef John Granata from The Post Office Cafe, making Mozzarella en Carozza.

8 slices white or Italian bread (crust trimmed)
4 – ½ inch thick slices whole milk mozzarella
1 cup flour
3 eggs (beaten)
2 cups bread crumbs
1 cup Panko Japanese bread crumbs
½ cup olive oil
½ cup canola oil
Salt & Pepper
1 qt. homemade tomato sauce
2 sprigs of fresh basil

1) Line 4 pieces of bread up. Lay cheese on top, season with salt and pepper and top off with remaining bread.

2) Place 3 bowls next to each other. Put flour, eggs and breadcrumbs in each bowl in that order. “Bread” each sandwich one at a time.

3) Meanwhile heat both oils in a large Dutch oven. With a thermometer, heat to 350 degrees. Place each sandwich in one at a time. If you put them in together the heat will drastically fall and the oil will saturate the sandwich.

4) After they are golden brown, drain them on paper towels. Serve them with your favorite sauce or lemon and parsley.
