In the Kitchen: Miso Brined Fried Chicken

Chef Nick Rabar from Avenue N joined The Rhode Show to make Miso Brined Fried Chicken.

Serves: 2 – 4
Recipe Time: 30 minutes


1# Chicken, Thighs and White Meat
1 cup Honey
¼ cup Miso Paste
2 cups Buttermilk
2 ea. Eggs
1 cup All Purpose Flour
1 teaspoon Garlic Powder
1 teaspoon Cayenne Pepper
1 teaspoon Paprika
¼ teaspoon Oregano
½ teaspoon Kosher Salt
1 gallon Canola Oil


Mix Miso Paste & Honey to create a brine

Add chicken to brine and allow to sit for at least 10 minutes.

Mix buttermilk and eggs.

Mix flour, garlic, cayenne, paprika, oregano and salt.

Place chicken in flour mix. Then into buttermilk mix. Then back into flour mix.

Preheat oil at 325 degrees.

Fry until crispy and more importantly until chicken has reached an internal temperature of 180 degrees.
