In the Kitchen: Escarole & Beans

Executive Chef and COO Brian Nadeau from Cucina Rustica, is in The Rhode Show Kitchen making this summer favorite Italian dish: Escarole & Beans. Enjoy for lunch or dinner!

Ingredients:

• cannelloni beans
• pancetta
• garlic
• shallots
• pecorino Romano cheese (grated)
• Chablis white wine
• chicken stock
• shaved Parmesan cheese (garnish)
• ground black pepper
• fresh house made rigatoni pasta

Instructions

For this basic sauté dish: render the pancetta down, then deglaze with white wine. Pan fry escarole separate before adding other ingredients. Reduce to your desired thickness.
