In the Kitchen: Crispy Softshell Crab

Paul Harrington of Slow Rhode joined us in The Rhode Show kitchen to show us how to make Crispy Softshell Crab.

Ingredients:

1 Softshell crab, soaked in buttermilk

ingredients 7 1.1

Dredge:
3/4 cup flour
1/4 cup fine cornmeal
1 T salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper

Chive Dressing:
1 T white vinegar
1 tsp dijon mustard
1 tsp chopped shallot
1 small clove garlic, crushed
1 tsp honey
1/2 cup canola oil (any neutral oil will do)
1 T sliced chives
Salt to taste

Vegetable set-up:
Handful of braising greens (a mixture of kale, mustard, collard, chard)
2 asparagus
1 small clove garlic, crushed
1/2 shallot sliced
Dash of white wine
Dash of vegetable stock
1 small pat of butter
