In the Kitchen: Potato Pancake, Liver & Applesauce

Potato Pancake, Liver & Applesauce ingredients

Susan Alper from Clean Plate joined us in the kitchen on Wednesday to show us how to make Potato Pancake, Liver & Applesauce.

For the Applesauce:

Ingredients:

  • 3 Apples
  • ¼ cup Sugar
  • Juice of 1 Orange

Steps:

  1. Cook on low heat for 20­-25 minutes.

For the Liver: 

Ingredients:

  • 1 lb. Chicken Livers
  • 1 Onion, diced
  • 2 Hard-Boiled Eggs
  • Salt and Pepper to taste
  • 2 tbsp. Chicken Fat

Steps:

  1. Cook onions in 1 tbsp. chicken fat with salt and pepper until soft and slightly browned.
  2. Remove onions to bowl.
  3. Add remaining fat to pan and cook livers until no longer pink.
  4. Mix all in food processor or meat grinder adjust seasonings. Do not over-process.

For the Potato Pancakes:

Ingredients:

  • 4 Potatoes, shredded
  • 1 Onion, shredded
  • 2 Eggs
  • 1 cup Matzo Meal

Steps:

  1. Mix all. Cook in chicken fat or veggie oil.
