Meatloaf with Mashed Potatoes and Butternut Squash

Chef Nikolas Zarokostas from The Middle of Nowhere Diner joined us in The Rhode Show kitchen to show us how to make their Meatloaf Dinner with Mashed Potatoes and Butternut Squash.

Meatloaf:

  • 5 lbs. ground hamburger
  • 1/4 cup fresh chopped garlic
  • 1/4 cup chopped carrot
  • 1/2 cup chopped onion
  • 1/4 cup celery
  • 3 eggs
  • pinch salt
  • pinch white pepper
  • 1/2 cup wet bread

Directions:

  1. Preheat oven 350 degrees
  2. Mix all ingredients with the ground hamburger thoroughly, and shape meat into loaf shape
  3. Bake for 1 1/2 hours.

cooking

Mashed Potatoes:

  • 5 lbs. Idaho potatoes
  • 1/4 lb. butter
  • 1/2 cup milk
  • pinch salt
  • pinch pepper

Directions:

  1. Boil potatoes until soft
  2. Drain well and add all ingredients
  3. Mash until fluffy

Butternut Squash:

  • 5 lbs Butternut squash
  • 1/2 cup brown sugar
  • 1/4 lb. butter
  • pinch of nutmeg

Directions:

  1. Boil butternut until soft
  2. Drain water well
  3. Mash all ingredients together until fluffy

Cranberry apple salad:

  • 1 handful mesclun greens
  • 1/2 granny smith apple
  • 1 pinch pine nuts
  • 4oz raspberry lime vinaigrette
  • 1 pinch dried cranberries
  • slice red onion

Directions:

  1. Toss mesclun greens in raspberry lime vinaigrette
  2. Top with sliced granny smith apples, dried cranberries, pine nuts, and red onion
