In the Kitchen: Braised Red Cabbage

Braised Red Cabbage

Executive Chef Andy Teixeira of Brix Restaurant joined us Tuesday to show us how to make their Braised Red Cabbage.


  • 1 head Red Cabbage, shredded
  • 1 Onion, sliced
  • 2 Tart Apples, sliced
  • 2 tbsp. Olive Oil
  • 1/2 cup Cider Vinegar
  • 1/2 cup Nptv Pinot Noir
  • 2 tbsp. Brown Sugar
  • 1 tbsp. Caraway Seed
  • 3/4 cup Vegetable Stock
  • 2 tbsp. Unsalted Butter
  • Salt and Black Pepper to taste


  1. Heat oil in sauce pot.
  2. Add cabbage, vinegar, wine, stock, sugar, caraway, and salt; stir to combine.
  3. Raise heat to medium-high, cover, and cook 5 minutes.
  4. Reduce heat to medium-low, and continue to cook, covered, stirring occasionally, 30 minutes.
  5. Stir apple into cabbage, and cook, covered, until cabbage and apples are tender.
  6. Stir in butter.
  7. Season with pepper.
