Pecan Praline Apple Tarts

Gerry Dupont from Edible Creations by Gerry joined us in the kitchen Wednesday to show us how to make Pecan Praline Apple Tarts.

Ingredients:

For the Shortbread Crust:

  • 1.5 sticks Butter
  • 1.5 cups Flour
  • 1/3 cup Confectioner’s Sugar

For the Tart Filling:

  • 1 bag Kraft Caramel Squares
  • 3/4 cup Heavy Cream
  • 1.5 cups Copped Pecans
  • 1 Granny Smith Apple (sliced thin long ways place in lemon and water to avoid browning)

For the Chocolate Ganache:

  • For drizzle and to coat shortbread crust
    • 2 cups Dark Chocolate Chips (Ghiradelli)
    • Tsp. Pure Vanilla

Steps:

For the Shortbread Crust:

  1. Add all ingredients together until a ball forms.
  2. Press into 9″ tart pan and bake at 350 degrees until golden brown.
  3. Cool.

For the Chocolate Ganache:

  1. Bring cream to a boil and add directly to chocolate chips and add vanilla.
  2. Whisk until smooth. Set aside.

For the Tart Filling:

  1. Place all caramels and heavy cream in sauce pan until melted and smooth.
  2. Add in pecan pieces and mix until combined.

To Plate:

  1. Put chocolate ganache in prepared pie crust, chill.
  2. After chilling, line apple slices over chocolate.
  3. Pour caramel mixture over entire apples and chill.
  4. Drizzle with ganache and garnish as you’d like.
