In the Kitchen: Portuguese Sliders

On Monday, Go Providence brought us Chef Ryan Connors from Red’s Street Kitchen to show us how to make Portuguese Sliders.


  • 1 lb. Ground Beef
  • 5 oz. Ground Chourico
  • 1 Pineapple
  • 2 Red Peppers
  • 2 medium Yellow Onions
  • 1 cup Mayo
  • 2 tbsp Piri Piri Sauce
  • 1 tbsp Portugese Allspice
  • 5 slices Cheddar Cheese
  • 10 Slider Rolls
  • 1 bunch Cilantro
  • Salt and Pepper

Portuguese Slider ingredients


  1. Mix ground beef and ground chourico in large mixing bowl, then place back in refrigerator.
  2. Toss red peppers in olive oil, salt, and pepper and place in oven at 400 degrees until charred on outside.
  3. Cut pineapple into small chunks and place aside.
  4. Mix piri piri sauce, mayo, and portugese allspice together.
  5. Take peppers out of the oven and cover with plastic wrap to steam.
  6. After 3 minutes, peppers should be ready to peel and cut.
  7. Take peppers and pineapple to sear in a pan and caramelize.
  8. Divide meat into small balls and slightly mash. Season lightly with salt and pepper and cook for 2 minutes on each side.
  9. Place cheese and pineapple mixture on cooked burgers and set aside.
  10. Toast rolls, add mayo mixture, place burger and garnish with cilantro.
