In the Kitchen: Tri-Tip Sirloin with Texas Red Chili and Cole Slaw Dressing

On Thursday, Pit Master Michael Strout from GottaQ Smokehouse BBQ joined us in the kitchen to show us how to make one of his recipes.

For the Spice Rub:

  • 1 cup Granulated Garlic
  • 1 cup Coarse Black Pepper
  • 1/2 cup Dark Chili Powder
  • 1/2 cup Spanish Paprika
  • 1 cup Kosher Salt

Mix and apply sparingly to meat, making sure that there are no pools of excessive rub.

For the Cole Slaw Dressing:

  • 1 1/2 cups Heavy Mayonnaise
  • 1/2 cup Apple Cider Vinegar
  • Salt and Pepper to taste
  • 2 lbs. Slaw/Cabbage Mix

Whisk all ingredients together and add to cabbage mix. Spice to taste.
