Roasted Brussels Sprouts with Thick-Cut Bacon and Butternut Squash Au Gratin

Chef John Granata from Post Office Cafe and TV Maitre d’ Joe Zito joined us in the kitchen Thursday to show us how to make a pair of Thanksgiving side dishes.

Ingredients:

  • 2 lbs. Brussels Sprouts
  • ¼ cup Olive Oil
  • ½ lb. Thick-Cut Bacon (cut into ¼ inch dice)
  • 1 Onion, sliced
  • ½ cup Broken Pecans
  • 2 tbsp. Brown Sugar
  • 4 tbsp. Butter
  • 2 tbsp. Fresh Lemon Juice
  • 1 tsp. Fresh Thyme
  • Salt & Pepper

For the Butternut Squash Au Gratin:

  • 1 large Butternut Squash (peeled, seeded cut in half and slice thick)
  • ¼ cup Olive Oil
  • 2 cloves Garlic (chopped fine)
  • ¼ cup Panko Bread Crumbs
  • ½ cup Grated Parmigiano
  • ¼ cup Chopped Parsley
  • 1 cup Heavy Cream
  • 2 Sage Leaves
  • Salt & Pepper

Roasted Brussels Sprouts with Thick-Cut Bacon and Butternut Squash Au Gratin ingredients

Steps:

  1. Preheat oven to 425 degrees.
  2. Lay sprouts on a sheet pan and coat with olive oil. Sprinkle with salt and pepper.
  3. Roast for 30 minutes or until they start to get some color. Remove.
  4. In a large sauté pan, put a small amount of olive oil in on medium heat. Add bacon and start to render.
  5. Next, add onions and allow to start to brown.
  6. Add pecans and all the butter. Once the butter starts to brown, add Brussels sprouts to the pan.
  7. Immediately add lemon juice, thyme and salt and pepper to taste.
  8. Shut off heat, stir well and cover.

For the Butternut Squash Au Gratin:

  1. Preheat oven to 375 degrees.
  2. Line butternut up, overlapping each other.
  3. Bring cream to a boil with sage and garlic. Pour over.
  4. Sprinkle top with Panko crumbs, grated cheese and parsley.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake covered for 30 – 40 minutes.
  7. Uncover and bake an additional 10-15 minutes until golden brown.
