Creamed Cabbage with Sweet Onions & Applewood BaconNick Rabar Cabbage

Serves: 2 – 4
Recipe Time: 25 minutes

1/2 head  Green Cabbage
4 strips     Applewood Bacon, crispy and small diced
1/2            Onion, sliced
1 pint        Heavy Cream
1/2 cup     Parmesan Cheese

In a sauté pan with a light amount of oil add onions and cabbage and sauté until soft and lightly browned. Add heavy cream and reduce by half until thickened. Add parmesan and stir until melted.

Butternut Squash & Gruyere Polenta CakesNick Rabar Polenta

Serves: 4
Recipe Time: 40 minutes

1 pint         Cornmeal, fine
1quart       Whole Milk
1cup          Butternut Squash, boiled in salted water, pureed
1cup          Gruyere Cheese, Shredded
1/4 cup      Chopped Chives

In a sauce pan over medium high heat bring milk to a boil. Add cornmeal and reduce to a low simmer. Stirring often, cook cornmeal until it is incorporated and no longer gritty. Add all other ingredients and cool. Form into cakes and sear in butter (clarified if possible) until golden brown.
