In the Kitchen: Smoked Chorizo

In the “Rhode Show” kitchen, presented by Crave RI, co-owner Owen Doyle and sous chef Shawn Hannagan from Gastros stopped by to make their house made chorizo, topped with tomatillo relish, cilantro cream, and cilantro garnish.  Gastros is the only USDA certified mobile food company that specializes in house made charcuterie, within the Rhode Island food truck scene.  It is run by co-owner/operator Owen Doyle and co-owner/chef Travis Gervasio.

Ingredients:

  • House made chorizo
  • Tomatillo relish
  • Cilantro cream
  • Cilantro garnish
  • Brioche bun

Served on a gourmet garlic butter toasted brioche bun.
